The Salmon Faverolles is a French farm breed from the village of Faverolles, built for winter eggs and the table and instantly recognizable by its beard, muffs, feathered legs and fifth toe. Underneath the whiskers is one of the sweetest temperaments in poultry — Faverolles are famously gentle, often submissive, and frequently end up at the bottom of a mixed pecking order, so they do best with equally calm flockmates. Hens keep laying tinted, light-brown eggs through the cold months when most breeds slow down. They dislike close confinement and want ground to scratch on, and that single comb can frostbite in hard cold.
